It’s the most wonderful time of the year – and what better way to celebrate than with magical, festive Mickey Mouse Christmas cookies?! These particular Mickey sugar cookies are Christmas pinwheel sugar cookies – delicious, soft and tasty sugar cookies, colored in bright, festive colors and swirled into delightful pinwheel sugar cookies of Holiday goodness!

One of the great things about red and green swirl sugar cookies, is that the festive Holiday colors are actually swirled into the cookie, meaning when you take a bite, you will see a gorgeous, swirly pattern of fun, festive colors!

Of course, these are even better than regular Christmas swirl sugar cookies, because these cookies are shaped like Mickey Mouse and obviously Disney makes everything more magical!

So, what are you waiting for? It’s time to start baking some magical Christmas Disney sugar cookies!

Christmas sugar biscuits

Ingredients:

  • ½ cup butter, softened

  • 1 cup sugar

  • 1 egg

  • 1 tsp vanilla extract

  • ½ tsp salt

  • 1 ¾ cups flour

  • Red food coloring

  • Green food coloring

First, cream the butter and the sugar with an electric mixer.

Add in the egg and the vanilla. Mix until the mixture is light and creamy.

On a low speed, gradually add the salt and flour and mix until fully combined.

Tip the cookie dough onto a lightly floured silicone pastry mat (or any lightly floured surface) and shape the dough into a rectangle (it doesn’t have to be perfect, it will just make it easier to cut).

Divide the cookie dough into three equal portions. I used a dough scraper to cut the dough like this one, but a knife would also work.

Set two portions aside and shape the other portion into a ball. Press your thumb into the centre of the dough to create a small well. Drop four drops of red food coloring into the well.

Carefully mix the food coloring through the cookie dough until it is completely red. You may want to add more food coloring depending on how bright you want your cookies to be.

Tip: To avoid staining your hands, use a spoon to mix the food coloring through the dough. You could also wear gloves if you prefer.

Repeat with another portion of cookie dough, using green food coloring. Set both colored portions aside.

On a lightly floured silicone mat or piece of parchment paper (or baking paper) roll out the plain portion of dough into a 7×7 inch square.

On a separate silicone mat or piece of parchment paper, roll out the green portion of cookie dough into a 7×7 inch square.

On another silicone mat or piece of parchment paper, roll out the red portion of dough into a 7×7 inch square.

With the plain square as the base, carefully flip the green square on top, so that the green dough completely covers the plain dough.

Carefully flip the red square on top of the green square. You should now have a cookie dough stack with three layers; plain on the bottom, green in the middle and red on the top.

Cut the cookie dough stack into one 5×7 inch rectangle and one 2×7 inch rectangle. Set the smaller rectangle aside.

Starting at one of the 7 inch sides of the larger rectangle, carefully roll the dough into a long, cylinder/log shape. Tightly wrap the log in plastic and place in the freezer for 30 minutes.

Now repeat with the smaller rectangle; starting at one of the 7 inch sides of the smaller rectangle, carefully roll the dough into another long, cylinder/log shape. Tightly wrap the log in plastic and place in the freezer for 30 minutes.

Preheat the oven to 180℃/350℉. Line a baking tray or cookie sheet and set it aside.

Once the dough has chilled for 30 minutes, unwrap the larger log and cut the dough into ½ inch slices. On the inside of the log there should be a gorgeous, festive swirl!

Unwrap the smaller log and, again, cut it into ½ inch slices.

Place the larger circles on the baking tray/cookie sheet and place two smaller circles above each larger circle to look like Mickey ears!

Carefully push the Mickey ears into the larger circles so that they won’t come apart after baking.

Tip: For the ears to be extra secure after baking, brush a small amount of water on the base of the ears before pressing them into the larger circles.

Swirled sugar cookies

Bake for 8-10 minutes or until firm.

Let the cookies cool on the tray for 5 minutes, then transfer to a cooling rack for an additional 5 minutes.

  • On a lightly floured silicone mat or parchment/baking paper, roll the plain dough into a 7x7 inch square. Repeat with other portions of dough, on separate silicone mats or parchment paper.
  • Carefully invert the square of green dough onto the plain dough.
  • Carefully invert the square of red dough on top of the green dough. The stack should be plain on the bottom, green in the middle and red on the top.
  • Cut the dough stack into a 5x7 inch rectangle and a 2x7 inch rectangle. Set the smaller rectangle aside.
  • Starting at one of the 7 inch sides of the larger rectangle, carefully roll the dough into a long, cylinder/log shape. Tightly wrap in plastic and place in freezer for 30 minutes.
  • Repeat with the smaller rectangle, starting at one of the 7 inch sides. Tightly wrap in plastic and place in freezer for 30 minutes.
