This cinnamon cupcake recipe makes the most amazing, soft cinnamon cupcakes that are wonderful on their own, and even better combined with this smooth and creamy pumpkin frosting – not to mention the adorable pumpkin decorations and Oreo Mickey ears that really take these cupcakes to a whole new level of perfection!
So what are you waiting for? It’s time to start baking these incredible Mickey Mouse cinnamon cupcakes with pumpkin frosting!

For The Cinnamon Cupcakes
Ingredients:
- 2 cups flour
- 1 tablespoon baking powder
- 1 tablespoon cinnamon
- ¾ teaspoon salt
- 1 ⅓ cups sugar
- ⅔ cup butter, softened
- 3 eggs
- 2 teaspoons vanilla
- ⅔ cup milk
Preheat the oven to 350℉/180℃ and prepare a cupcake tin with 12 cupcake liners.

In a small bowl, whisk together the flour, baking powder, cinnamon and salt.

With a mixer, beat together the sugar and butter until creamy.

Add in the eggs, mixing between each one, and scraping down the sides of the bowl as necessary. (Don’t worry if it looks kind of lumpy!)

Add the vanilla and milk and mix until combined. (Again, it might look a bit lumpy, but it will get better!)

On a low speed, add the dry ingredients, ½ cup at a time. Mix until everything is fully combined.

Divide the cupcake mixture evenly among the cupcake liners. Bake the cupcakes for 25-30 minutes or until a toothpick inserted into the centre of a cupcake comes out clean.

Once baked, place the cupcakes on a cooling rack to cool completely before decorating.

For the pumpkin spice frosting
Ingredients:
- ½ cup butter, softened
- 2 cups powdered sugar
- 3 tablespoons pumpkin puree
- 1 teaspoon vanilla
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon ground ginger
- Pinch of salt
With an electric mixer, beat the butter until it’s smooth and creamy. Then add 1 cup of powdered sugar and mix until combined.

Add the vanilla and the pumpkin puree and mix.

Add the spices (cinnamon, nutmeg, cloves and ginger) and 1 more cup of powdered sugar. Mix again.

Scoop the frosting into a piping bag, fitted with a star tip.

For decorating:
- Mini Oreos
- Chocolate chips
- Green Mini M&Ms (or any small, green candy)
Once the cupcakes have cooled completely, pipe on the frosting in a swirl shape to look like a pumpkin.

Place a chocolate chip upside down in the centre of each cupcake to look like the stem.

Place a green mini M&M (or small, green candy) near the stem to look like a leaf.

Lastly, place 2 mini oreos on each side of the cupcakes to look like Mickey ears!

Instructions
Cupcakes
